At Vitalia Montrose, we prioritize from-scratch cooking and source fresh ingredients weekly. Our culinary team prepares meals that are flavorful, nutritious, and tailored to resident needs. From house-made soups and sauces to freshly prepared entrées and sides, we focus on visible, high-quality preparation. As Culinary Director, I see how fresh sourcing and scratch cooking enhance health, satisfaction, and daily life.

Building Every Dish by Hand

In my kitchen, from-scratch cooking means preparing each item from start to finish. When we make Salisbury steak, we form the patties in-house, sear them, and build the sauce from the ground up. Then we finish cooking the steaks directly in that sauce to develop flavor.

Even simple menu items receive the same attention. For a fish fry, we batter and fry the fish ourselves. We do not rely on pre-battered, frozen products. This hands-on approach protects both quality and taste.

Fresh Ingredients, Personalized Menus

Fresh ingredients support resident health by reducing preservatives, added sugars, and excess sodium. Because we control the process, we serve meals that balance flavor with nutrition.

I also adapt meals based on direct resident feedback. When a resident dislikes a component, I adjust the recipe. I may substitute a different protein or swap vegetables to better match their preferences and dietary needs. Scratch cooking gives us that flexibility.

We balance comfort foods with fresh, healthy options. Alongside familiar favorites, we offer fresh vegetables, salads, and fruits. This variety ensures nutritional balance while honoring the flavors residents enjoy.

One standout favorite prepared entirely from scratch is my chili. It is hearty, flavorful, and consistently requested.

Chili Bulk Recipe

Ingredients

40 lb. ground beef
4 onions, diced
4 green and or red bell peppers, diced
4 tomatoes, diced
1 gallon beef stock
½ cup tomato paste
1 can tomato sauce
1 cup chili powder
¼ cup cocoa powder
¼ cup granulated garlic
¼ cup granulated onion
¼ cup cumin
¼ cup paprika
½ cup Worcestershire sauce
Salt and pepper to taste

Brown the ground beef and drain excess fat. Add onions, peppers, and tomatoes, and cook until softened. Stir in tomato paste, tomato sauce, and beef stock. Add seasonings and Worcestershire sauce. Simmer until flavors fully develop, stirring occasionally. Adjust salt and pepper as needed before service.
